Mango marzipan cake
The fruity aromas of mango in combination with the finest marzipan are the'perfect match' for anyone who loves a touch of the exotic.
And to match these wonderful flavors, we have this fruity-fresh cake creation:

Mango marzipan cake

Ingredients vanilla sponge cake:
- 4 eggs
- 180 g cane sugar
- 150 g spelt flour
- 30 g starch
- 1 tsp backing powder
- 40 ml sunflower oil
- 60 ml hot water
- 1 pinch of vanilla salt
- 1/2 tsp finely ground vanilla
Ingredients Mascarpone cream:
- 500 g Mascarpone
- 500 ml cream
- 5-6 tbsp powdered sugar
- 2 packets of cream stabilizer
- 1/2 tsp ground vanilla
- 1 small tin of mango in wedges
- 1 pack of mango marzipan pralines from Lauenstein
Preparation vanilla sponge cake:
You will need a 20 cm baking tin for the sponge dough.A little tip from us: bake the dough the day before.
Whisk the eggs, cane sugar, vanilla salt and ground vanilla for approx. 8 to 10 minutes until frothy and doubled in volume.
Preheat the oven to 160 degrees top and bottom heat.
Mix the flour, baking powder and starch. Sift carefully and in portions onto the egg-sugar cream and fold in.
Finally, mix the heated water with the oil and fold in quickly.
Pour the batter into the prepared baking tin and bake in the middle of the oven for 35 to 40 minutes.
Leave the sponge cake to rest for half an hour in the warm oven with the door open.
Preparation Mascarpone cream:
Drain the mango slices well and cut into small cubes.Halve a few mango marzipan pralines and cut into small cubes.
Whip the cream with 1 tbsp vanilla sugar and cream stabilizer until stiff.
Beat the mascarpone with 5 tbsp powdered sugar until creamy and fold in the cream in portions.
Assembling the cake:
Cut the vanilla sponge cake into 4 layers and layer the cake in this order:1. Vanilla sponge cake

2. Vanilla sponge cake
Mascarpone cream / mango & praline cubes
3. Vanilla sponge cake
Mascarpone cream
4. Vanilla sponge cake
On Top smooth out the Mascarpone cream
Spread the remaining cream (partially colored if desired) around the edge of the cake.
For further decoration, pipe small dots of cream onto the cake and arrange the halved chocolates on top.
Finally, place the cake in the fridge for at least two hours.
