Fine chocolate & pralines from Lauenstein Confiserie
In collaboration with food blogger Denise, we are delighted with her creation of a chocolate cheesecake with our chocolate and pralines taking center stage.
The use of Lauensteiner dark chocolate bars and Lauensteiner pralines not only gives this cheesecake an extraordinary flavor, but also a refined elegance.
The Lauensteiner dark chocolate bar is the star of the cake, so to speak.
With its strong cocoa note from 75% cocoa and the balance between sweetness and bitterness, it gives the cake a deep and dark note. Just really chocolaty. With every bite, the chocolate develops a sensual taste that slowly unfolds and melts on the tongue like butter.

The Lauensteiner orange caramel cream truffles are the cherry on top of the cake - or in this case, the truffle on top of the cake.
The decoration on the cheesecake adds a final highlight to every slice. They turn a cheesecake into an elegant masterpiece and give it a particularly luxurious touch. Add a few dried orange slices to pick up the flavor of the orange again - and because it just looks great.
The combination of artisan expertise, high-quality ingredients and Denise's passion for baking resulted in a chocolate cake that embodies the essence of Lauensteiner: Masterful chocolate creations that make every moment special.

Preparation
1.First bring all the ingredients to room temperature. Wrap the springform pan (24 cm) several times with aluminum foil to make it watertight. Grease the base and sides of the tin and line with baking paper.
2.
Preheat the oven to 180°C (top and bottom heat). Fill a deep baking tray about two fingers wide with water. Grind the shortbread cookies in a mixer. Melt the butter and add to the cookie crumbs with the cocoa and orange zest. Mix well and press evenly onto the base of the springform pan.
3.
Melt the dark chocolate over a bain-marie. Place the cream cheese and sour cream in a bowl and stir until smooth. Add the vanilla, sugar, salt and orange zest and stir in. Gradually stir the eggs into the cheese mixture. Finally, slowly add the melted chocolate and mix until smooth. Pour the mixture into the mold and place the mold firmly on the worktop a few times to release any air bubbles.
4.
Place the springform pan on the baking tray in the bain-marie and bake in the preheated oven for approx. 60-75 minutes until the cheesecake is just a little wobbly in the middle. Open the oven door and leave the cake in the oven for 30 minutes. Remove and chill in the fridge for at least 5 hours.
5.
For the chocolate icing, heat 75g of cream. Chop the chocolate very finely and place in a bowl. Pour over the hot cream and stir until smooth and the chocolate has melted. Pour quickly over the cheesecake. Finally, decorate the cheesecake with chocolate truffles and kumquat slices.
