Today we're bringing a little summer feeling back to the beginning of fall with a Mediterranean-inspired recipe: Bruschetta-style stuffed potatoes with balsamic truffles as the highlight.It all sounds a bit wild at first, but it tastes great together!

For us, potatoes are somehow more associated with fall/winter and tomatoes are clearly associated with summer. Nevertheless, the mixture of these two ingredients works wonderfully and we have brought back a little summer feeling.
The "Loaded Potatoes" in bruschetta style are of course filled with lots of tomatoes and garlic, with a hint of creamy mozzarella and Lauenstein balsamic truffles and a few pine nuts for a special touch. It's always cool when you combine completely different things that go really well together in terms of their basic idea / direction;

Preparation:
It is best to put your Lauenstein balsamic truffles in the fridge beforehand so that you can cut them better.First boil your potatoes for about 30 minutes until soft.
Roast your pine nuts in a non-stick pan (without oil) over a medium heat. Turn a little at a time and when they start to smell nutty and turn slightly brown, they are ready. Then set aside.
Now wash your tomatoes. Cut the tomatoes and mozzarella balls in half. Peel the garlic and chop into nice small pieces.
Now cut 2 of your truffles in half and carefully scoop out the filling with a spoon. Chop the remaining chocolate into large pieces and set aside. Put the filling together with the olive oil and Italian herbs in a small bowl and mix everything well.
Then add your tomatoes and garlic and mix everything together. The easiest way to do this is in a bowl with a lid, which you then shake well.
Cut your finished potatoes (be careful when they are warm!) open a little in the middle (like a V) so that you can fill them nicely. Then place your bruschetta filling on the potatoes and a little around the potatoes on the plate.
At the end, spread your mozzarella pieces, chocolate chips and pine nuts on top. Add 1-2 basil leaves and 1-2 truffles & you're done.
Stuffed potatoes - with an Italian touch
Ingredients:
- 6 potatoes (medium size)
- 150 g cocktail tomatoes
- 4 balsamico truffles (from Lauenstein)
- 6 mozzarella balls (small)
- 2 garlic cloves
- 1 tbsp pine nuts
- 2 tbsp olive oil
- salt, pepper
- 1/3 tbsp italian herbs
- basil
