Rhubarb yeast cake with pudding

Ingredients yeast dough:
- 500 g flour
- 80 g sugar
- 80 g butter (liquid)
- 250 ml milk
- 1 egg
- 1 cube of yeast
- pinch of salt
Ingredients topping:
- 1.5 kg rhubarb
- 800 ml milk
- 2 packs of vanilla pudding
- 150 g sugar
- 1 cup of sour cream
- 1 egg
Ingredients chocolate icing:
- 160 g coconut oil
- 2 tbsp cocoa
- 2 tbsp sugar
- 2 sachets of vanilla sugar
- 2 eggs
Preparation of the dough:
Dissolve the yeast and 1 tbsp sugar in 250 ml warm milk. Mix all the ingredients together and knead into a smooth dough, cover and leave to rise for 1 hour.Preparation of the topping:
Peel the rhubarb and boil briefly in water with a little sugar - then drain and set aside. Cook a pudding from the milk, custard powder and sugar according to the instructions.Cover the surface with cling film and leave to cool slightly. Then stir the sour cream and 1 egg into the pudding.
Now roll out the risen yeast dough onto a baking tray, spread the rhubarb over the entire surface and bake in the middle of the oven at 180°C top/bottom heat for approx. 20 minutes.
Then spread the pudding evenly over the cake and bake for a further 20-25 minutes.
Once the cake has cooled, spread the chocolate icing on top. Prepare it as follows: Mix the cocoa and sugar. Then stir in the eggs. Add the heated coconut oil in batches and mix quickly.

Instructions:
You will need small glasses (⌀ approx. 5 cm), thin rhubarb stalks, ribbon (from the Lauensteiner strawberry rhubarb truffle gift pack) and flowers.First cut the unpeeled rhubarb stalks to the same length (over the edge of the glass). Now place a few stalks around the glass and secure with a rubber band. Now thread in the remaining stalks and wrap them with the ribbon. Fill the glasses with water and decorate with flowers.
If available, the finished glass can be placed on a small rhubarb leaf. That's it!
