Pink pepper berries, also known as pink pepper, actually have nothing to do with pepper at all...
But what are these pink-red berries? And how do you use them?

What is pink pepper?
Pink pepper or pink berries are the fruits of the Brazilian pepper tree (Schinus terebinthifolius) and the Peruvian pepper tree (Schinus molle). The latter belongs to the genus of pepper trees (Schinus) within the sumac family.
Pink pepper is used in the kitchen as a spice and for decoration.
Lamb's lettuce with fried mushrooms &

Preparation time

Ingredients for the dressing
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp mustard (Dijon)
- 1 tsp honey
- salz and pepper
Ingredients for the salad:
- 400 g lettuce
- 2 slices of Emmental cheese (sliced wafer-thin)
- 100 g diced bacon
- 1/2 piece of pomegranate
- 15 g pink pepper chocolate (from Lauenstein)
- 200 g mushrooms (brown)
- pecan nuts
- 1/2 tsp paprika powder (smoked)
- 1 tbsp olive oil

Preparation of dressing:
Put all the ingredients in a jar with a lid and shake well.Then put it aside and prepare the salad completely before adding the dressing.

Preperation of salad:
First, take care of your lamb's lettuce and wash it thoroughly. Ideally, you should immerse it in cold water for a while and leave it to float. Then drain it well and add it to your salad bowl.For the pecan nuts, we now need a non-stick pan (without oil). Toast them over a medium heat, stirring regularly. As soon as they smell nutty, remove them from the heat and put them aside. Now fry your ham cubes in the pan. Over a medium heat, turn regularly and carefully scoop out of the pan at the end, leaving the fat in the pan.
Then carefully clean your mushrooms and cut them into slices. Now fry the mushrooms in the bacon fat.
Mix the 2 tbsp olive oil with the paprika powder and add this mixture to the pan with the mushrooms. Stir regularly over a medium heat. Cook until the mushrooms a nicely softened.
When coring pomegranates, we always take a bowl full of water and do it by immersion. That way, there's less splashing and mess and you can remove the seeds really easily. We need 1 large handful of pomegranate seeds per salad, which you can add directly to the lamb's lettuce.
Pour the dressing over the lamb's lettuce and mix well. The add the fried mushrooms, diced bacon and pecan nuts and mix everything together carefully.
Finally, drape your cheese slice in the middle and add your pink pepper chocolate, roughly chopped, on top.
What can pink peppercorns
be used for?
Pink pepper tastes spicy and piquant, but is not hot. Its fruity taste is somewhat reminiscent of juniper. If you crush the whole berries with a mortar, they give off a very aromatic, tart scent that is also a little reminiscent of citrus fruits. After grinding, however, the pink pepper berries should be processed quickly, as their aroma quickly evaporates. The aromatic berries can be used in the kitchen either to season savory and sweet dishes or as a garnish. The flavor goes well with:

- Vegetable dishes
- Cheese, such as goat cheese
- (light) sauces & marinades
- Salads & salad dressings
- Desserts & Chocolate
